I'll honorably mention Watchmaker and SUNN 0))), but I know that I am missing a few other notable albums. Definate lists should always be in January anyway (especially since the new From Monument to Masses comes out 12/31/05). Either way, there are plenty of albums better than the new Opeth (keep in mind that I'm a fan of their work) and I have not heard the lastest Mesrine album.

High on Fire-Blessed Black Wings.
Stellar 3 piece band, and one of the few bright lights on the sounds of the underground tour.
A fury divine had probably the best list I've seen and the one I most agree with. I, on the other hand can't begin on how many good CDs came out in 2005. Lots of shitty ones too, as mentioned above, ex: God Forbid, Trivium, Chimaira, Avenged Sevenfold. American metalcore trash, except the Avenged Sevenfold, that's just shit. ;) Nevermore and High On Fire being exceptions as they are both great bands. This thread was a good indiction of who has any taste at all. Nice mention on Deathchain, david, the new album fucking rips.
